Instructions
- 1
1. In a small saucepan, combine the fresh purple figs, 250 ml (1 cup) water, sugar, yellow lemon zest, fresh thyme, and fine salt.
- 2
2. Bring the mixture over medium heat and cook for 8 minutes, stirring occasionally, until the figs soften and the liquid becomes deeply colored. Do not let it boil aggressively.
- 3
3. Meanwhile, heat the remaining 250 ml (1 cup) water until very hot, about 195 °F / 90 °C. Add the Earl Grey tea and steep for 4 minutes.
- 4
4. Strain the Earl Grey tea and mix it into the still-hot fig syrup. Press the solids gently while straining to extract flavor, but do not force too much pulp through. Discard the solids.
- 5
5. Stir the fresh yellow lemon juice into the concentrate and let it cool for 10 minutes. Then transfer it to the refrigerator or an ice bath until well chilled.
- 6
6. Fill 4 glasses with the ice. Divide the cold fig, lemon, and tea concentrate among them, using about 120 ml (1/2 cup) per glass.
- 7
7. Top each glass with chilled sparkling water, about 150 ml (2/3 cup) per glass, and stir gently once so the bubbles stay lively.
- 8
8. Garnish with the thin yellow lemon slices and a little extra fresh thyme. Serve immediately.
Chef tips
For deeper flavor, let the strained concentrate rest chilled for 30 minutes before mixing with sparkling water. If you want a cleaner texture, strain it twice.
Substitutions
You can substitute the sugar with the same amount of coconut sugar for a toastier profile, though it will change the color. If you do not have Earl Grey, use a mild black tea and add an extra strip of lemon zest.
