Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Place the peach wedges on a small tray, sprinkle with 20 g (1 1/2 tbsp) cane sugar, and roast for 18 to 20 minutes until tender and lightly caramelized at the edges.
- 2
Meanwhile, heat the water until hot but not boiling, about 80 °C / 176 °F. Add the white tea and steep for 4 minutes. Strain and let it cool.
- 3
Transfer the roasted peaches to a pitcher or bowl. Add the remaining cane sugar, Meyer lemon juice, fresh Thai basil, and fine salt. Gently mash to release the juices and basil aroma without making it bitter.
- 4
Stir the cooled white tea into the peach mixture. Let it rest for 5 minutes so the Thai basil can infuse the drink base.
- 5
Fill 4 glasses with ice. Divide the peach-tea base among the glasses, straining if you prefer a cleaner texture, or leaving it rustic if you want more pulp.
- 6
Top each glass with very cold sparkling water and stir gently. Garnish with thin Meyer lemon slices and extra Thai basil leaves. Serve immediately.
Chef tips
For livelier bubbles, chill the peach-tea base before adding the sparkling water. If you want a more aromatic version, rub the Thai basil leaves lightly between your hands just before adding them.
Substitutions
You can substitute the peaches with donut peaches or yellow peaches. If Meyer lemon is unavailable, use half regular lemon and half mandarin juice. Thai basil can be replaced with sweet basil, though the flavor will be less spiced.
