Instructions

  1. 1

    1. Bring the water to 85 °C / 185 °F in a small saucepan. Remove from the heat, add the white tea and fresh ginger, cover, and let steep for 5 minutes.

  2. 2

    2. Strain the infusion to remove the white tea and ginger. While still warm, add the sugar and stir until fully dissolved. Let it cool to room temperature.

  3. 3

    3. Place the Galia melon in a blender with the Meyer lemon juice and a little zest. Blend until very smooth.

  4. 4

    4. In a large pitcher, gently muddle the fresh mint with a wooden spoon to release its aroma without tearing it too much.

  5. 5

    5. Add the Galia melon puree and the cooled white tea and ginger infusion to the pitcher. Stir well to combine.

  6. 6

    6. Divide the ice among 4 glasses and pour in the base mixture until each glass is about two-thirds full.

  7. 7

    7. Top each glass with chilled sparkling water and stir gently once so you do not lose too much carbonation.

  8. 8

    8. Garnish with extra fresh mint and serve immediately, very cold.

Chef tips

For a smoother texture, strain the melon puree before mixing it with the infusion. Use very cold sparkling water to preserve the bubbles longer.

Substitutions

You can replace Galia melon with honeydew melon. Mint can be swapped for spearmint, and sugar can be replaced with agave syrup for a rounder sweetness.
