Instructions
- 1
1. Prepare the jasmine tea by steeping it in hot water at 185°F/85°C for 3 minutes. Strain and reserve 240 ml (1 cup) of brewed tea.
- 2
2. Place the cucumber in a blender with the lime juice, sugar, and black salt. Blend until very smooth.
- 3
3. Strain the cucumber mixture through a fine sieve or clean cloth, pressing well to extract as much liquid as possible.
- 4
4. Combine the strained cucumber juice with the jasmine tea, cooled or at room temperature. Chill the base for 10 minutes so it becomes nicely cold.
- 5
5. Divide the mint leaves among 4 glasses and gently muddle them to release their aroma without tearing them too much.
- 6
6. Add ice to each glass and pour in the cucumber, lime, and tea base, filling each glass about halfway.
- 7
7. Top with very cold sparkling water and stir gently to combine without losing too much fizz.
- 8
8. Garnish with extra mint and lime slices if desired, and serve immediately.
Chef tips
For a cleaner, more elegant texture, strain the cucumber twice. For a brighter citrus note, add a little lime zest directly to the base before chilling.
Substitutions
You can replace the sugar with simple syrup at an equivalent sweetness level. Black salt can be swapped for a pinch of fine sea salt, though you will lose its distinctive mineral note. If you do not have jasmine tea, use a mild green tea and add a few extra mint leaves.
