Instructions

1. Heat the 500 ml water to 176°F / 80°C. Remove from the heat, add the genmaicha tea, and steep for 3 minutes. Strain and let it cool completely.
- 2
2. In a blender, combine the 300 g diced Asian pear, yuzu juice, sugar, and 8 g of the fresh mint leaves. Blend until very smooth.
- 3
3. Strain the pear mixture through a fine sieve for a cleaner texture, then mix that concentrate with the cooled genmaicha tea.
- 4
4. Divide the ice among 4 glasses. Add a few thin Asian pear slices and the remaining mint leaves to each glass.
- 5
5. Pour in the pear, yuzu, and tea mixture until each glass is about two-thirds full.
- 6
6. Top each glass with the well-chilled sparkling water, stirring gently so the bubbles stay lively. Serve immediately.
- 7
7. If you prefer it extra cold, chill the base at 39°F / 4°C for 10 to 15 minutes before adding the sparkling water.
Chef tips
For stronger fizz, chill the glasses before serving. Do not add the sparkling water until the last moment.
Substitutions
You can replace yuzu with a 1:1 mix of lemon and mandarin juice. If Asian pear is unavailable, use a firm regular pear, though the flavor will be less crisp and floral.
