Instructions

  1. 1

    1. In a small saucepan, prepare the jasmine tea using 480 ml (2 cups) of water. Heat the water to 185°F / 85°C, turn off the heat, add the jasmine tea, and steep for 3 minutes. Strain and cool completely.

  2. 2

    2. In a bowl, combine the diced red pear with the sugar, the finely grated yellow lemon zest, and 80 ml (1/3 cup) lemon juice. Let it macerate for 10 minutes so the fruit releases its juices.

  3. 3

    3. Blend the red pear and lemon mixture until you get a light purée. For a smoother texture, strain it through a fine sieve, pressing with a spoon to extract all the liquid.

  4. 4

    4. Add half of the very thinly sliced fresh fennel to the purée or concentrate and stir gently. Let it sit for 5 minutes so it perfumes the base.

  5. 5

    5. In a large pitcher, combine the chilled jasmine tea with the red pear, yellow lemon, and fresh fennel mixture. Stir well until fully blended.

  6. 6

    6. Divide the ice among 4 glasses. Pour the soda base into the glasses until each is about two-thirds full.

  7. 7

    7. Top each glass with chilled sparkling water and stir gently. Garnish with the remaining fresh fennel and serve immediately.

Chef tips

For a more elegant result, chill the glasses for 10 minutes before serving. If you prefer more fizz, add the sparkling water at the very end and stir as little as possible.

Substitutions

You can replace the red pear with firm white pear, and the sugar with simple syrup at the same sweetness level. If you do not have fresh fennel, use a small amount of dill fronds for a different but fresh profile.
