Instructions

  1. 1

    1. In a small saucepan, bring 500 ml water to a gentle boil at 212 °F / 100 °C. Remove from the heat, add the dried hibiscus flowers, and let steep for 8 minutes.

  2. 2

    2. Strain the hibiscus infusion into a pitcher and immediately stir in the honey while the liquid is still warm so it dissolves fully. Let it cool for a few minutes.

  3. 3

    3. Place the diced red pear, lemon juice, and finely grated lemon zest in a blender. Blend until very smooth.

  4. 4

    4. Lightly crush the sliced fresh fennel with the back of a spoon or in a mortar to release its aroma. Add it to the pitcher with the hibiscus infusion.

  5. 5

    5. Add the red pear puree to the pitcher and mix well. Taste and adjust with a little more honey if you want a sweeter drink.

  6. 6

    6. Fill 4 glasses with ice. Divide the pear, hibiscus, and fennel mixture among the glasses, filling each about two-thirds full.

  7. 7

    7. Top each glass with the chilled sparkling mineral water and stir gently once so you do not lose too much fizz. If desired, garnish with a few extra thin fennel slices.

  8. 8

    8. Serve immediately, very cold.

Chef tips

For a cleaner texture, you can strain the pear puree before mixing it with the infusion. Chill the pitcher for 10 minutes in the refrigerator before adding the soda if you want an even colder drink.

Substitutions

You can replace the honey with agave syrup for a vegan version. If you cannot find fresh fennel, use an extra strip of lemon peel for a more citrus-forward profile, though it will change the character of the drink.
