Instructions

  1. 1

    Preheat the oven to 220 °C / 425 °F.

  2. 2

Place the fresh pineapple cubes on a small baking tray. Add half of the grated ginger, 20 g brown sugar, 1 rosemary sprig, and the fine salt. Toss well to coat the pineapple.

  3. 3

Roast the pineapple for 18 to 20 minutes at 220 °C / 425 °F, stirring once halfway through, until lightly caramelized on the edges and very fragrant.

  4. 4

While the pineapple roasts, make a quick syrup: in a small saucepan combine the water, the remaining brown sugar, the remaining grated ginger, and the other rosemary sprig. Cook over medium heat for 3 to 4 minutes, until the sugar fully dissolves.

  5. 5

Remove the syrup from the heat, let it steep for 5 minutes, then strain out the ginger and rosemary.

  6. 6

Take the roasted pineapple out of the oven and let it cool for 10 minutes. Remove and discard the rosemary sprig.

  7. 7

Transfer the roasted pineapple to a blender with the strained syrup and the fresh lime juice. Blend until smooth.

  8. 8

Fill 4 glasses with ice. Divide the pineapple mixture among the glasses, filling each about halfway.

  9. 9

Top each glass with well-chilled sparkling water and stir gently. Serve immediately.

  10. 10

If desired, garnish with a small rosemary tip or a piece of the roasted pineapple from the prepared batch.

Chef tips

For a lighter texture, strain the pineapple mixture before serving. If you prefer a deeper flavor, let the pineapple caramelize a bit more without burning.

Substitutions

You can swap lime for lemon for a softer citrus profile. Brown sugar can be replaced with white sugar or panela. Rosemary can be replaced with fresh thyme for a different aroma.
