Instructions

1. Place the green apples in a blender with the lime juice and blend until smooth. Strain well, pressing firmly, to extract about 360 ml / 1 1/2 cups of juice. Chill until needed.

2. For the syrup, add the water, sugar, salt, and 2 rosemary sprigs to a small saucepan. Bring to a gentle boil over medium heat, about 212°F / 100°C, and cook for 5 minutes.
- 3
3. While the syrup cooks, lightly smoke the remaining 2 rosemary sprigs by carefully passing them near a stove flame or using a kitchen torch until fragrant, without fully burning them. Add them to the syrup, turn off the heat, and steep for 3 minutes. Strain and cool.

4. Place the matcha in a small bowl. Add the hot water at 175°F / 80°C and whisk until smooth and lump-free.
- 5
5. In a large pitcher, combine the green apple juice, the cooled smoked rosemary syrup, and the dissolved matcha. Stir until fully blended.
- 6
6. Add the cold sparkling water just before serving and stir gently to keep the bubbles lively.
- 7
7. Divide the ice among 4 glasses and pour in the drink. Garnish with extra fresh rosemary if desired and serve immediately.
Chef tips
For a deeper rosemary flavor, let the syrup cool with the rosemary steeping for up to 10 minutes before straining. For a cleaner texture, strain the apple juice twice.
Substitutions
You can replace lime juice with lemon juice in the same amount. Sugar can be swapped for coconut sugar, though the color will be darker and the flavor more toasted. If you do not have sparkling water, use chilled club soda.
