Instructions

  1. 1

    1. Heat a cast-iron skillet or grill over medium-high heat. If you prefer to use the oven, preheat it to 450 °F / 230 °C.

  2. 2

    2. Place the fresh pineapple cubes on the hot skillet or on a baking tray and cook for 6 to 8 minutes, turning once, until the edges are golden and lightly charred. If using the oven, roast at 450 °F / 230 °C for 8 minutes. Let cool for 5 minutes.

  3. 3

    3. In a small saucepan, combine the cane sugar and water. Cook over medium heat for 2 minutes, just until the sugar fully dissolves. Remove from the heat.

  4. 4

    4. Transfer the charred pineapple to a blender with the warm syrup, ground black lime, fresh lime juice, fresh spearmint, and fine salt. Blend until very smooth.

  5. 5

    5. Strain the mixture into a pitcher to remove the coarser pulp, pressing with a spoon to extract as much liquid as possible.

  6. 6

    6. Add the ice to the pitcher and pour in the cold sparkling mineral water just before serving. Stir gently so the drink keeps its fizz.

  7. 7

    7. Serve immediately in 4 glasses with extra ice if desired, and garnish each glass with thin lime slices and a few extra fresh spearmint leaves.

Chef tips

For a deeper flavor, chill the strained base in the refrigerator for 20 minutes before adding the sparkling water. Add the mineral water at the end to preserve the bubbles.

Substitutions

You can substitute spearmint with mild mint. If you cannot find ground black lime, use finely grated lime zest and an extra splash of lime juice, though the flavor will be less deep. Cane sugar can be replaced with agave syrup.
